Christmas Cookie Countdown Day 10-13

Sorry for the late Cookie Countdown posts!  Tis the season to be so busy I can't even see straight lol!

Cake Batter Cookies

1 box cake mix of your choice (I used devil's food)
1 tsp baking powder
2 eggs
1/2 cup vegetable oil
1 cup additive of your choice (I used reeses peanut butter chips)

In medium bowl combine cake mix & baking powder.  Add eggs and oil, then mix until well blended.  Dough will be crumbly, so you may have to use your hands for it to really come together.

Stir in additions. Drop by rounded spoonfuls onto cookie sheets.

Bake in a pre-heated 350 degree oven 9 minutes. Allow to cool on sheet for 5 minutes

Carrot Cake Cookies

1 cup granulated sugar
1 cup packed brown sugar
1/2 cup butter or margarine, softened
1/2 cup vegetable shortening
2 eggs
 1tsp vanilla
3 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 8oz can crushed pineapple, drained (reserve 1-2 tbsp juice for frosting)
1/2 cup grated carrot
1/2 cup golden raisins
1/2 cup chopped nuts

Frosting:
2 cups powdered sugar
3 oz cream cheese softened
1 tbsp butter or margarine

Heat oven to 375 degrees. Lightly grease cookie sheets. In a large bowl combine sugar, brown sugar, butter, shortening, eggs and vanilla.  Beat at med. speed until well blended. Add flour, baking powder, baking soda, cinnamon and salt. Beat at low speed unti soft dough forms.  Stir in pineapple, carrot, raisins, and nuts.  Drop by tsp 2" apart onto baking sheets. Bake 10-12 minutes until golden brown. Cool completely.

Mix frosting ingredients and reserved pineapple juice on low until smooth. Spread evenly onto cookies. Let dry completely before storing.

Makes approx. 4 1/2 dozen

Larry's Famous Chocolate Chip Oatmeal Cookies

1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
2 cups flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp baking soda
1 tsp vanilla
2 cups quick oats
1 cup chocolate chips
1 cup chopped pecans

Cream shortening and sugars, add eggs and mix well; add vanilla. Sift flour, baking powder, salt and baking soda; add to mixture, mixing well.  Add oats, chips, and pecans, mix well. Drop by tsp onto greased cookie sheet. Bake at 350 degrees for 12-15 minutes. Do not overbake. Allow cookies to set on hot cookie sheet for several minutes.

Paula Deen's Three Chocolate Cookies

1 cup butter
1/2 cup veg. shortening
3/4 cup sugar
1 3/4 cup firmly packed brown sugar
3 eggs
1 tsp vanilla extract
3 3/4 cup flour
2 tsp baking soda
1 tsp salt
1 (12 oz) package semi-sweet chocolate chips
1 cup milk chocolate chips
1 square unsweetened chocolate, grated
1 cup toffee brickle chips

Preheat oven to 375 degrees. Lightly grease baking sheetsl

With an electric mixer, beat butter and shortening at medium speed until creamy; gradually add sugars, beating until fluffy. Add eggs and vanilla, beating well.

In a small bowl, combine flour, baking soda, and salt; gradually add to mixture, beating until blended.  Stir in chocolate chips, and toffee brickle chips.  Drop cookies onto baking sheets. Bake for 8-10 minutes until lightly browned.
